Understanding Our Yemeni Honey Varieties

Honey reflects its origin. Climate, flora, and traditional beekeeping practices shape the character of each harvest.

Our honey is sourced from Yemen and selected for its monofloral integrity, seasonal harvesting, and traditional extraction methods. Each variety in our collection reflects a distinct environment and nectar source.

Sidr Malaki Honey

(Usaimi & Hadrami)

Sidr honey is derived from the nectar of the wild Sidr tree (Ziziphus spina-christi). Harvested once yearly during the flowering season (typically October–November), it is known for its rich golden color, which may deepen naturally over time.

Cold-extracted and minimally filtered, Sidr honey retains its smooth, viscous consistency and balanced sweetness. Notes may include gentle caramel or butterscotch tones, with a rounded, structured finish.

Regional Distinction

  • Hadrami Sidr: Sourced from Wadi Do’an and surrounding valleys in Hadramout, an area known for its long-standing beekeeping traditions.

  • Usaimi Sidr: Sourced from northern Yemeni valleys, reflecting regional flora and climate differences.

Both varieties are monofloral and harvested using traditional methods.

“Malaki” (Royal) refers to the distinguished quality historically associated with this variety.

Sumur Malaki Honey

Sumur honey is derived from the nectar of the Sumur tree (a species of Acacia native to Yemen). It is typically darker in tone, with a more robust profile and deeper caramel notes.

Harvested in Hadramout and surrounding regions, Sumur honey reflects the arid valley environment and seasonal flowering cycle of the tree.

Like our Sidr selection, it is raw, cold-extracted, and minimally filtered.

Sourab White Honey

Sourab White Honey is a lighter-toned Yemeni honey valued for its smooth, dense texture and delicate profile. It is commonly associated with Yemen’s highland regions, where seasonal blooms contribute to its naturally pale appearance.

Light to creamy in color — sometimes deepening gradually over time — it offers a gentle sweetness with soft floral character.

Harvested seasonally and cold-extracted with minimal filtration, it is not heat-treated.

Like the rest of our collection, it is transported by air from origin before being carefully packed in Canada.

Comparing Profiles Harvest & Handling

Our honey is:

  • Monofloral (derived primarily from a single floral source)
  • Harvested seasonally
  • Cold-extracted
  • Minimally filtered
  • Not heat-treated

To preserve quality and freshness, honey is transported by air from origin before being carefully packed in Canada.

Natural variations in color and texture may occur over time. Crystallization is a natural process and does not affect quality.

Comparing Profiles

Each variety differs in:

  • Color intensity
  • Viscosity
  • Sweetness balance
  • Aromatic character

Experiencing these distinctions side by side offers a deeper appreciation of their natural character.

For those wishing to compare profiles directly, first orders placed through a registered account include a small tasting selection.
